Last night I made these delicious bad boys again. I’m afraid life has gotten in the way of documenting itself again so these pictures are about a month old but I recommend it as a veggie dinner for non veggies. Here’s how…
-loads of big mushrooms (trust me you will want more than you made)
-wash and take the stems out
-finely chop stems and any busted/sub par mushrooms
-finely chop 1/2 onion
-finely chop kale/zucchini/spinach (all or some, whatever is growing or is in your fridge (~1/2 cup)
-1/2-1 tbsp garlic
-2 tbsp olive oil/wine/balsamic vinegar (each)
-1 tbsp soy sauce
-1/2-1 cup bread crumbs
-1/4 cup fresh herbs (basil/parsley/oregano/sage/rosemary)
toss veg, liquid, herbs and cook until soft
throw in bread crumbs add a little h20 or broth if needed to make crumbs soft
dip caps in mixture of soy sauce, balsamic, wine, stuff with goodness and sprinkle some Parmesan cheese over the top.
bake in the over @ 350 for about 30” until the caps are a little squishy and the cheese melts. Enjoy!!!
