Fathers day was celebrated a day early this year. We drove over to Seattle for the evening and made a meal that will probably be discussed for years to come at the Johnson house.

While discussing what would be a good entree choice for our celebratory meal, Mom had mentioned casseroles because Dad cooks fish and steak better than anyone else so we weren’t going to try to top that. Well, just a casserole didn’t seem quite enough so Kelsi chimed in that she recalled a conversation with Dad where when given the choice between say, steak or Spam, the choice was Spam. Apparently Spam won over just about anything so we thought we could do a Spam casserole. Well I’m not sure how it worked it’s way to enchiladas but I ended up making two pans of enchilada’s, one with spicy grilled spam and one with spicy chicken. Kelsi made her black bean and avocado salad and we had a green salad. For appetizers we had BBQ’d oysters with mango jalapeno butter and asparagus guacamole. It was pretty tasty. The oysters and guacamole I mean, I left the spam enchiladas for the guys, who said they were pretty good. So I guess the lesson here is Kelsi has a really good memory and you better mean it when you say Spam is better than anything.
